Happy Birthday Colton! We love you so much!! So much that we make you COOKIES!
The one gift that Colton can expect to get every year is these Chocolate Chip Cookies.
Ya know how everyone has there “thing” that one treat that they can just go hard on..well Coltons is cookies,
and it always has been. He’s been known to eat any entire batch of them in one sitting. I’ve also seen him mack down an entire pack of Oreos in one day! When he decided to make the dedication to Veganism I wanted to make sure he didn’t miss out on Homemade Cookies, so I started experimenting to make the most perfect
Vegan Chocolate Chip cookie. I’ve gone through several trials of cookies with him, each one was good,
but these were PERFECT. You see, usually when I bake or create food, I don’t really write down exactly what I used in the recipe..huge mistake! After Colton made a comment about a batch I made last year saying,
“they are good, but they're always different” He explained that they needed to be the same every time.
That “Classic Chocolate Chip” should have consistency. Alright baaaaabe, now I have a challenge!
I finally perfected these and can’t wait for you all to make them. You absolutely do not need milk, eggs, or butter to make amazing cookies. I will also point out that even though these cookies are labeled “Vegan”,
that doesn’t mean they taste like kale. They still have sugar. They still have fat.
And they are still made with flour! So that means they still taste good ;)

1 cup Bobs Red Mill Gluten Free flour
1/2 cup rolled oats (blended into a flour)
1/2 tsp baking powder
1/2 baking soda
1/4 tsp salt
1/4 cup almond butter
1/4 cup olive oil
1/4 cup maple syrup
1/2 cup coconut sugar
2 tbsp apple sauce
1 tsp vanilla
1. Preheat oven to 350
2. In a large mixing bowl combine dry ingredients
3. In a separate bowl combine wet ingredients
4. Beat wet ingredients or run them through a high speed blender
(makes for a smoother dough)
5. Now add the wet ingredient mixture to the dry ingredients
6. Mix well, fold in chocolate chips
7. Line your baking tray with parchment paper
8. Use 1 tbsp of the cookie dough for each cookie,
roll cookies into balls, then flatten with the back of a wet spoon
9. Bake in the oven for 11-13 minutes
10. Remove from oven and let cool for 20-30 minutes,
cookies will crisp up during the cooling time
