Very Berry Quinoa Salad

Very Berry Quinoa Salad, what a perfect Spring or Summer dish! So good for potlucks and/or picnics. Its a unique twist on a typical “fruit salad” and also a completely different way to enjoy Quinoa. A lot of people say they don’t like Quinoa, and I totally get that! I didn’t at first either! I still don’t like Quinoa in place of rice, but if you think outside the box and use it for something other than a grain to go with your beans, it has so much more to offer! First off I love quinoa cold, not hot. It goes so well in refrigerated salads or light and refreshing side dishes. Quinoa can also make a great sweet dish. Try it for breakfast in place of oatmeal or porridge. Yup, breakfast! Let me introduce to you the “Very Berry Breakfast Bowl” featuring this Very Berry Quinoa Salad recipe! Harley and I have been enjoying it every morning with a big scoop of Coconut yogurt, and some crushed almonds. So good! And baby approved! I love this for breakfast because it’s high in protein! Did you know Quinoa is one of the only plant sources of complete protein? This means it contains all 9 essential Amino Acids. A breakfast high in protein keeps you full and satisfied until lunch, and really helps with mid morning sugar cravings..or sugar crashes! Harley and I both love berries in all of our breakfasts too! Naturally sweet, easy finger foods for babies, and loaded with antioxidants. Strawberry season is still going STRONG in San Diego right now, the Farmers Market tables have been covered with these sweet berries for the last couple of months and we just can’t get enough of them. We go through 2 three packs a week! This year the crop has been extra delicious, so I just had to revisit this recipe. This berry salad is actually an old one I posted on my blog a couple years ago, but I wanted to repost it with some more up-to-date pictures. And how cute are those Coconut bowls?! I got them from “coconutbowls.com” They use recycled coconut shells to make bowls! So cool and so fun for kids. I hope you and your kiddies will love this recipe. We have a few more weeks of strawberry season so make sure to try it out soon! And just a quick tip, the salad is even better the next day, after being in the fridge overnight. Ingredients

1 cup dry quinoa

2 cups chopped strawberries

1 small punnet blueberries

The juice of 1 lime

2 tbsp maple syrup

2 tbsp balsamic vinegar

 

Directions

1. Cook quinoa accordingly

2. Once quinoa is done cooking, refrigerate overnight or at least until cold

3. Chop strawberries

4. Add chopped strawberries and all blueberries to a large mixing bowl

5. Now add the cold quinoa to the mixing bowl

6. Add lime juice, maple syrup, and balsamic vinegar, mix well

7. Salad can be enjoyed now or refrigerate overnight so quinoa can absorb all the flavors
