Oven Baked Fries w/ Protein Guacamole

Happy Fry Day everyone!! Hehe, bet ya never heard that one before huh? Super stoked it’s finally the weekend. It’s been a long week in our house, Harley was sick with a terrible virus last week, and has been recovering. A sick baby also means a tired mama. While that was going on last week, continuing into this week, Colton has been working 12-14 hour work days..meaning I’ve been with Harley AND taking care of Harley all by myself for two weeks..and let me tell you how exhausting that is! Ya hear me mamas? Colton has been exhausted too with those long hours, and his labor intensive job. Lately when dinner time comes around I really just want to "get the job done”. Something quick, easy, and filling. Haven’t had much creative time in the kitchen this week. But thats okay because we’ve still had tasty, filling food. And after our long days all we’ve been wanting is a big bowl of CARBS. Ya heeaaaaar me again mamas?! These fries bake up in 35-40 minutes, depending on your oven. With a convection oven I bet you could have them ready to go in 20! For those of you who get weekend French Fry cravings..these are for you. Such a healthy alternative as they are baked, not fried. They are made without any oxidizing oils, and you can control the amount of salt added. I love a sprinkle of pink salt on these, it’s perfect! I served them with Guacamole to dip, making them even more filling and super kid friendly. Kids love dip! And babies love Avocado! I decided to add some sneaky peas into the Guac as well. This gives the meal a little protein boost, making it that much more satisfying. Did you know that Peas are one of the vegetables highest in protein? Most all Vegan protein powders are made from pea protein. Peas are also standard for babies! Feel free to use this recipe as a side dish as well, baked fries go great alongside a veggie burger. Ingredients

4 yukon gold potatoes 

2 tbsp paprika

2 tsp garlic powder

generous sprinkle of pink salt

 

Directions

Preheat oven to 425

Cut potatoes into wedges

Add potatoes wedges to a large mixing bowl, add spices, mix until all wedges are coated

Lay wedges out flat on a baking tray lined with parchment paper

Bake in the oven for 35-40 minutes

 

 

Protein Guacamole

Ingredients

2 ripe avocados

1/2 cup green peas

juice of half a large lemon

all spices to taste

garlic powder

onion powder

sea salt

black pepper

red chili flakes

 

Directions

In a mixing bowl mash avocados well

Add lemon juice and all spices

Mix and mash well (I recommend using your hands for best consistency)

Once mashed, fold in peas

Serve!
