Thick and Indulgent CHOCOLATE WAFFLE Recipe

Easy Chocolate waffle recipe, based off my original Vegan waffles that were posted on Mothers Day, with a Chocolate twist. Am I the only one who crave chocolate in the morning sometimes? Is that a tired Mama thing? These waffles are a pretty exceptional way to beat a chocolate for breakfast craving. They are dairy free and oil free. Making these indulgent waffles pretty low in fat. They do contain sugar but absolutely no refined sugars. I always sweeten with coconut sugar as I don’t get a sugar rush or sugar crash from it. I also love coconut sugar in waffles and baked goods because of its burnt/golden brown sugary flavor. I also used dutch cocoa in these to make them super duper chocolatey. Dutch cocoa is always my secret ingredient in choice recipes. It had a very rich chocolatey depth to it, much better than cacao powder, (at least for baking). These waffles were originally created for a Cake experiment I put together last weekend for a friends birthday..yes waffles+cake is a thing! Stay tuned because my next blog post will explain how I turned these waffles into an awesome CAKE. Have fun with these for a weekend breakfast, and yes they are freezer friendly, so make a double batch. I love to top mine with fruit like strawberries or bananas and a drizzle of peanut butter. Chocolate and Peanut butter is for sure my guilty pleasure and if you buy the right peanut butter it’s nothing to feel guilty about, it adds a great boost of protein to meals! Enjoy!

 

Recipe

 

 

Ingredients

 

1 cup all purpose flour

1 cup almond milk

1/2 applesauce

2.5 tbsp dutch cocoa powder

4 tbsp coconut sugar

1 tbsp ground flax

1 tsp vanilla

1 tsp baking powder

1/4 tsp salt

 

 

Directions

 

Preheat waffle iron on high setting

Add all wet ingredients to a high speed blender, blend until smooth and well combined

(you can of course do this by hand in a mixing bowl, but blending will create a smoother batter)

In a seperate large mixing bowl, sift all dry ingredients

Now add the wet mixture to the dry

You should now have a nice thick waffle batter

Add 3/4 cup scoops of batter to preheated waffle iron, cook for about 5 mins

Remove and repeat until all batter is used

Recipe should make 4 large waffles-double recipe to make more or to create a freezer stash
