Chocolate Waffle CAKE

When I say Chocolate Waffles what do you think of? If your answer wasn’t Cake..c’mon man think outside the box! Haha okay so, cake isn’t the first thing I think of when I hear waffles either but once you try my Chocolate Waffle CAKE, that will all change. I made this cake for a friends birthday this past weekend and it was definitely a great conversation starter. I wanted to make something a little different..I’ve been bored with traditional recipes lately and I’ve also already made a ton of birthday cakes this year so it was time to step it up! My idea was inspired by my friends love for WAFFLES. He actually has this rad idea to start a Farmers Market business making Vegan Waffles on site! Sounds bomb right?! I decided to stack up the rich chocolatey waffles to create cake “layers”, then slab each layer with a generous amount of peanut butter frosting, because chocolate + peanut butter = love, right? The outcome was superb. Kinda reminded us all of German Chocolate Cake with a peanut buttery twist. At first I was worried it would be too rich and that we wouldn’t actually want to eat this creation. Nooope, it was so good we ate the whole cake between four people! You could definitely make this “Cake” for an impressive brunch. Adding fruit on top not only made it look super cute but added a lightness to it. If you don’t make it for brunch, save it for your kids next birthday party, they will love it, parents will get a kick out of it, and here’s the big secret..it’s really not thaaaat bad for you. This Cake is completely Vegan. Now, now, it’s NOT sugar free by all means, but it IS refined sugar free. Meaning I sweetened with Coconut Sugar and Maple Syrup. How to Essemble the Chocolate Waffle Cake

1. Make a double batch of my "Chocolate Waffles" -recipe in previous post

2. Make a batch of Peanut Butter Frosting -recipe below

3. Once waffles have fully cooled, layer 1 by 1 waffle, then frosting, optional coconut flakes,

another waffle, more frosting, more coconut

4. Repeat until desired height for cake is reached

5. Decorate the top of the cake with a THICK amount of frosting, coconut flakes,

fresh berries, candles, and maybe even chocolate chips!

6. Cut waffle cake as you would any other cake, from the top to the bottom in triangle slices

 

 

Peanut Butter Frosting Recipe

Ingredients

1.5 cups of coco butter

1/4 cup peanut butter

1/4 cup maple syrup

1 tbsp maca powder

1 tsp vanilla

sprinkle of pink salt

 

Directions

Add all ingredients to a food processor

Process until smooth

Note-

you can place in fridge to thicken but do NOT leave in fridge to long or it will harden
