Protein Rich Mac n Cheese for Kids

Okay let me just start off by saying this recipe is NOT just for kids..this is so delicious for parents too! I’ve made and shared a ton of Vegan Mac n Cheese recipes before, but this is by far my best one! I chose not to bake this one, as I like my Mac n Cheese oooey and goooey. Most kids like it that way too. I find that baked pastas loose their creaminess. I’ve also discovered how Nutritional Yeast (a key ingredient in Vegan cheese recipes) looses its flavor in the oven. Anyone else notice/experience this? I tried to imitate the Kraft boxed Mac n Cheeses we used to eat as kids. That’s where I get the ooey gooey inspiration from. Unlike the boxed ones this Mac n Cheese contains no dairy and no nasties. There is even a hidden veggie in sauce! Hellloo so kid friendly. So they can this yummy, tasty, creamy as heck pasta dish, that’s actually super healthy with hidden nutrients. And guess what else Mamas? I used Banza Pinwheel Pasta to make this dish so it’s packed with Protein! I feel like it’s a known struggle to get kids to eat protein. Do any of your kids also just lean towards fruit and bready CARBS..? Haa Harley is only 1 and that battle has already started. Banza Pasta is made from Chickpeas! Making it gluten free and loaded with Plant Based protein. It cooks up the same as any other pasta and it taste just like any other pasta too! SO the kiddies can continue there carb craze while we sneak in not only veggies, but extra protein too! Everyone in my house loved this recipe and agreed it was the best Vegan Mac n Cheese we’ve made. It also cooks up super quick too! I would recommend this meal for a night when your in a rush or can’t be bothered to chop a bunch of veggie or turn on the oven. 1 package of Banza Pinwheel Pasta

2 cups frozen peas (thawed)

1/2 cup raw cashews

1 large cooked carrot (about 1 cup chopped)

2 tsp apple cider vinegar

1 tbsp dijon mustard

1 cup water

1/4 cup nutritional yeast

1/2 tsp garlic powder

1/4 tsp onion powder

1 tsp pink salt




Cook pasta accordingly

If your carrot is not already cooked, you can boil it in the pasta water

While pasta is boiling, make your sauce

Add all sauce ingredients to a high speed blender, blend until smooth

Once pasta is done, drain and add back into the pot

Add thawed peas to the pasta

Now pour all of the sauce into the pot with the pasta and peas

Mix well and serve!
