VEGAN + Gluten Free Chocolate Caramel Brownies

September 3, 2018

Coming at you guys with a BOMBB dessert recipe!! 1’s been awhile..Dessert Ferri took a hiatus for awhile..oh wait I just posted that Chocolate Waffle Cake recipe..hahaha. But I haven’t posted any yummy Ferri Dessert recipes that I’ve been making for myself lately, so I figured it was time! 2 because it’s MY BIRTHDAY! Yeup I’m 25 today and what better way to celebrate than with the love of my life..CHOCOLATE. I’m also not really a birthday cake person, but I get down with a good brownie! These brownies  would def be described as “cake brownies” rather than fudge ones, so that acceptable for a birthday dessert right?! And of course you guys already know what I’m about to say..they’re some what HEALTHY. These babies are gluten free and actually pack in a protein punch. I’m sure you’ve heard of black bean brownies by now, right? Well these are the next best thing..white bean brownies! The white beans have a much milder flavor and blend up so creamy. So they actually make a good afternoon snack/treat. They pair great with a cup of chai too. The caramel on top definitely makes these brownies. Don’t skip it! If you can’t find the Vegan Caramel I use, ill provide an alternative below. Shout out to Hey Boos for making epic vegan caramel out of coconut. Sooo good. Dang I can’t believe I’m 25 already guys!! Enjoy the recipe xoxo

1 cup rolled oats

1 can white beans (rinsed and drained)

1/3 cup cocoa powder

1/2 cup almond butter (flavor is mild-sub peanut butter if you want to make PB brownies)

1/2 cup maple syrup

1 tsp vanilla

1/4 tsp pink salt

1 tsp baking soda

1 cup chocolate chips

Hey Boos vegan caramel

shredded coconut

Preheat oven to 350

Add all ingredients except for the chocolate chips to a food processor,

process until a smooth batter forms

Fold in chocolate chips

Add batter to a greased brownie pan

Bake for 30 minutes, or until toothpick comes out clean

Let brownies cool completely

Then decorate with a thick layer of caramel and a sprinkle of shredded coconut

Note- These brownies are best when COMPLETELY cooled, even better if you can wait overnight.

The chocolate chips will harden and make a very rich brownie.

Note- If you don’t have Hey Boos caramel you can make your own by blending

tahini, medjool dates, vanilla,

and pink salt.
