Peppermint Hot Chocolate Christmas Cookies

 Back with another dessert recipe over here because I wouldn't be the Dessert Fairy without a cookie recipe going up for the holidays! Yes Yes baking season is still going on for me and it will continue for as long as my boys will help me eat the treats, which will probably be forever! Holiday desserts are the most fun to make because again, there are just so many fun flavors to play with. Yes I'm even still making things with pumpkin over here! Hah! Adding a bit of Peppermint essential oil to this cookie batter made them OFFICIAL Christmas Cookies. Man they are so deeply delicious with double chocolate flavors and a hint of candy cane mint. We finished this batch so quick, there was no problem having to make the second and third recipe tests! You can sub Peppermint extract for these too if you don't have the essential oil. My guess would be 1/4 to 1/2 tsp of extract. Make sure to taste test when subbing. Do you guys ever cook with essential oils? I just recently started to when I learned that some can be edible. Which should be obvious since they're just plants! I was thinking about busting out another holiday recipe using Cinnamon essential oil..what do you guys think? Anyways I'll be making a 4th batch for a festive Christmas Eve family night. I'd love to hear all of YOUR Holiday traditions! Please share with me! We always, drive around checking out christmas lights, open 1 gift, and watch the movie Elf..(okay who agrees Elf is like the best christmas movie ever?!) And we will probably have Harley leave a couple of these Chocolate Peppermint cookies out for Santa..if there are any left that is ;) Here's the recipe! And Merry Christmas! 




1.5 cups oat flour


3 tbsp dutch cocoa powder

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt


1 flax egg (1 tbsp ground flax mixed with 3 tbsp water)

1 cup coconut sugar

1/2 cup + 1 tbsp melted coconut oil

1 tsp vanilla

2 drops peppermint essential oil (or sub 1/4 - 1/2 tsp peppermint extract)

Add ins-

1 whole dark chocolate bar (chopped)



1. Preheat oven to 350, line a baking tray with parchment paper

2. Mix flax egg, set aside to thicken

3. In a large mixing bowl combine all dry ingredients

4. Now melt your coconut oil 

5. Add melted coconut oil and all wet ingredients to a high speed blender, blend until smooth

6. Taste to determine if you have used the correct amount of peppermint for your liking

7. Now add the wet ingredients to the bowl with the dry and mix well

8. Fold in chopped chocolate 

9. Using 1 tbsp sized scoops of cookie dough to roll into balls, place on cookie sheet, lightly flatten with the back of a metal spoon, or your palm

10. Bake in the preheated oven for 15 minutes- every oven is different make sure to keep an eye on these the timing could change depending on your oven..look for a risen center and lighting browning edges

11. Let cool for a minimum of 30 minutes before serving
