Sweet Potato Pancake Stacks

Sweet Potato Pancake Stacks is what I'll be making Christmas Morning this year and I am so excited about it! Sweet Potato is another one of those ingredients that just gives a meal that festive feel. And a quick break down of Sweet Potatoes, particularly Yams..have 100% of your daily Vitamin C and A needs, so you can skip sugary juices or powdered supplements. They also contain high amounts of Vitamin E and Beta-Carotene, which you can see by its deep orange color. Sweet Potatoes also have very high amounts of Iron, very important for us Moms! These Pancakes are a great thing to make for any holiday breakfast, brunch, or snack! Not only do these Pancakes taste delicious and look ever so decadent, they also pack a nutritious punch! That's why I love making these for my toddler, Harley. He gets this beautiful plate of pancakes, (and yes he is allowed to pour maple syrup all over, we use 100% PURE maple), and I get the satisfaction of knowing he's had whole grains and vegetables at breakfast..WINNING. I do enjoy a plate of these to myself as well, I love to top mine with almond butter and cacao nibs..so good! For Harley I like to use 1/4 cup size scoops of batter to make the perfect little "baby pancake", but of course you can make larger ones if you like. Feel free to add more coconut sugar to your mix if you like them sweeter too. They also freeze great so I love making extra to stash in the freezer. Sometimes i'll pop one out and top it with nut butter for a lil pick-me-up, or toddler snack. Definitely recommend to make these for your babies and if you do please share!! 

 

 

Ingredients

 

1 cup rolled oats

1 tsp baking powder

1 tbsp chia seeds

1 tbsp coconut sugar

1/3 cup mashed sweet potato

1 cup almond milk

1 tsp vanilla

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Directions

1. Heat a pan over medium heat

 

2. Add all ingredients to a high speed blender, blend until smooth

3. Let batter sit for 5 minutes to thicken

4. Add 1/4 size scoops of batter to the heated pan for each pancake

5. Cook pancake until bubbles form, then flip

6. Repeat until all batter is used
