Rockin Rainbow Noodle Bowl

Helllloooo everyone! Back by popular demand is a NOODLE BOWL recipe. The noodle bowl has easily become my favorite homemade dinner lately, it's just so good. They're super filling and can be made anyway you like! You can easily switch up the veggies for your favorites, add the type of protein you like, add chopped nuts, fresh herbs, lime juice or whatever. My favorite part about preparing this meal, is that rice noodles only take about 3 minutes to cook! Everything else comes together pretty quickly as well. On this particular night I decided to do something a little fun with recipe..(with you guys in mind of course). To make this noodle bowl that much more colorful..for the most beautiful photo..I mixed a few different types of noodles to create quite the scene. I found these colored noodles from a brand called Perfect Earth Foods, who sell an assortment of rice noodles made in Thailand. The dark ones are made with black rice, the red ones with red rice, and so on. Of course this recipe can be made with regular (plain) rice noodles and taste exactly the same. Which is normally how I make it myself, it was really just aesthetic this way, but it for the blog!!!! Right? Ha! Enjoy everyone<3




1 package rice noodles (or mix colored rice noodles)

1 pack firm tofu, cut into squares (optional or add your own protein)


1 head of broccoli, chopped

1 large carrot, julienned

1 bell pepper, sliced

1 tbsp minced garlic

1 tbsp sesame oil

Braggs liquid aminos (or soy sauce) to taste


Sauce Ingredients

1/4 cup peanut butter

2 tbsp sesame oil

1 tsp Braggs (or soy sauce)

1 tsp maple syrup

1/4 cup water

Sriracha to taste (I usually add mine to my personal bowl instead of the sauce so my toddler can enjoy as well)



1. Bring pot of water to boil, cook rice noodles accordingly 

2. Chopped/Prepare all veggies

3. Heat a pan over medium heat, add veggies to pan along with 1/2 water and cook until water is evaporated

4. Add garlic and braggs/soy sauce to the pan and continue to stir fry the veggies until well cooked

5. Now heat a separate pan over medium heat, mix tofu squares with 1 tbsp sesame oil, add to the heated pan and cook for 4-5 minutes on each side until browned

6. Now prepare sauce- all ingredients to a bowl and whisk together

7. Once everything is cooked through, add noodles to the pan with veggies

8. With the heat turned OFF, add the sauce to the pan with the veggies and tofu and mix well

9. Serve into bowls and top with the tofu (and optional more sriracha)
